Prosciutto
Prosciutto, also known as Unknown Prosciutto (U. Prosciutto), is a rare Italian fig whose original cultivar name has been lost to history. Although its early origins remain undocumented, the variety was brought to the United States and introduced to the collector community by Aaron Delmanto of NJFigFarm. Today, it is recognized as one of the finest modern Italian collector figs, admired for its exceptional fruit quality and dependable production. As a common fig, Prosciutto is self-fertile and does not require the fig wasp for pollination, making it well suited to a wide range of growing regions.
The medium-sized fruit ripens early in the season, developing a deep red interior with a dense, jam-like texture and satisfying seed crunch. At peak ripeness, Prosciutto delivers an intensely concentrated berry flavor, combining rich strawberry preserves with notes of raspberry and other dark berries, balanced by just enough acidity to keep the sweetness bright and lively. In warm, dry conditions, the fruit can partially dehydrate on the tree, further concentrating its sugars and creating an almost fruit leather-like texture that many collectors consider exceptional. Although its true historical identity has been lost, Prosciutto has earned a reputation as one of the premier berry-flavored figs in cultivation, prized for its early ripening, remarkable flavor intensity, and outstanding eating quality.
